It has been traditionally held that Moses wrote the Book of Deuteronomy. How could Moses write about his own death and burial in the valley of Moab in Deut. 34?

First, it is not unreasonable to say that Moses could have written about his own death and burial. God has revealed the future in minute detail to His prophets (Daniel chapters 2; 7; 9; 12). The Spirit of God could have inspired Moses to write the final chapter of Deuteronomy.
Second, it is reasonable to assume that someone, maybe Joshua, could have added this chapter as a conclusion to this book. It is common for someone to add a conclusion or a tribute to an author’s last work, which might be incomplete. This is similar to an author writing a preface to the work of another author.
